Lemme explain what brought this coffee into your life. I roast each small batch (normal yield is about 5 pounds roasted) on a Diedrich IR3 Roaster. Each batch takes about 15 minutes to complete and during that time I am controlling heat, air flow, listening, looking, and recording the changes your future coffee is going through. If a single parameter is not met, the batch is thrown away, and only perfection makes it to your coffee maker. Once a batch has met muster, it de-gases (gives off CO2) for at least 12 hours, and then it ships to you. Other than batches of coffee I roast for our coffee shop, I roast coffee when you order it, so that the product is the freshest possible.
